Paloma

Ah Ma's take on a Paloma - one with a kiss of smoke (macam wok hei), instead of the traditional version. We use Mezcal in this Paloma and it's quite the crowd pleaser with sour, sweet and smoky notes.

Base Spirit: Mezcal

Cocktail Strength: Medium

Flavour Profile: Citrusy, Sweet, Smoky, and Refreshing

Ingredients

  • Topanito Espadin Mezcal 40% - 60ml
  • Lemon Juice - 15ml
  • Lime Juice - 15ml
  • Rich Simple Syrup - 15ml
  • Saline - 3 drops
  • Thomas Henry Pink Grapefruit Soda - To Top

Method

1) Add Mezcal, Lemon Juice, Lime Juice, Simple Syrup and Saline to a shaker tin filled with ice
2) Shake until well-chilled
3) Strain and pour into highball glass with Ice, until the 2/3 mark
4) Top up with Thomas Henry Pink Grapefruit Soda
5) Garnish with Grapefruit wedge
